The Year for Self-Improvement

Published May  11, 2021

It's been over a year since I last updated, but, much like everyone else, the past year has been a roller coaster of a ride - with the pandemic putting a halt to almost everything in our lives except for survive, I had ample to to do a lot of self improvement. One of my main focuses was to become a better cook. My life consisted of eating out and, at most, making sandwiches or microwaveable meals. Could I have survived not having this skill? Maybe, but it helps knowing how to cook the basics and being able to conjure something up on the fly.

Making the food was one thing, but learning to photograph food was another. I didn't use my traditional camera/lighting setup for the food, so it was a different approach (note: some food was more photogenic than others):

Oven Roasted Salmon
Turmeric Chicken
Pan Seared Steak
Butterscotch Cookies
Bourbon Chicken
Dalgona Milk
Honey Glazed Chicken
Sweet & Sour Chicken
Orange Creamsicle Cheesecake

I'm sure that these cooking projects were a distraction on my mental health, though. Being stuck at home with the lack of actual socializing takes its toll on you. Don't worry about me, though, I'm okay now! I've learned to deal with it and not dwell as much as I used to. However, if it's taking a big toll on you, seek some help, or maybe gather more information - you'll thank yourself later. Know that you're not the only one out there, and there are people who care.

Now that there are a few vaccines out, we're starting to return back to 'normal' as much as we can. Hang in there, there's light at the end of the tunnel! Sending you all the love I can through the interwebs!
